THE BEST BRAN MUFFINS

1/2 c rolled oats

1 c all-purpose flour

1 c whole-wheat flour

1/2 c all-bran cereal

1 t baking powder

1 t baking soda

1 egg, beaten (may just use the white)

1/4 c vegetable oil

1/2 c molasses

3/4 c buttermilk (can use nut milk and just add a teaspoon of lemon juice to "create" buttermilk)

1 can (8oz) crushed pineapple, undrained

1-2 c chopped nuts, dates or raisins

In a mixing bowl, combine oats, flour, whole wheat flour, cereal, baking powder and soda. Make a well in the center. Combine the egg, oil, molasses, buttermilk and pineapple with juice. Pour into well; mix until dry ingredients are moistened. Stir in nuts, dates or raisins. Fill 18 Pam sprayed muffin cups 2/3 full. Bake at 400* for 12 minutes or until golden brown.
