BROWN RICE CASSEROLE

2 c boiling water

1 c brown rice

1 small onion, chopped

1 stalk celery, chopped

1 can tomatoes, or 2 fresh tomatoes

1 t lemon juice

Garlic powder, paprika, sage or thyme to taste

Add brown rice, onion, celery, tomatoes and seasonings to boiling water. Cook until rice is tender. Add lemon juice before serving.
