CREAMY BASIL DRESSING OR DIP
6 T lemon juice
3 T fresh chopped basil or 1 T of dried basil
1 t dry mustard, optional
2 large garlic cloves, minced
6 T olive oil
1 1/2 c plain low-fat yogurt or 1 1/2 c tofu
salt to taste, optional
Place the lemon juice, basil, mustard and garlic in a food processor or blender. With the machine running, gradually add the oil, little at a time. When it is blended in, add tofu and blend. (If using yogurt, gently stir the yogurt into lemon juice mixture.) Season with salt. Cover and refrigerate. Stir well before serving.
