CHOLESTEROL-FREE PANCAKES

10 oz tofu, firm

1 c tofu, soy or low fat milk

2 T canola oil

2 T honey

1 t lemon juice

1 t vanilla extract

1/2 c whole-wheat flour, sifted

1 t baking powder

1/2 t baking soda

Place all wet ingredients in blender and blend until smooth. Sift together all the dry ingredients. Add the dry ingredients to the blender mixture and mix until smooth. Preheat nonstick skillet at medium heat. Pour pancake batter into skillet to make the size pancake desired. When the top of pancake begins to bubble, turn pancake over and cook until lightly browned.
