TOFU CHEESECAKE

Crust:

1 1/2 c ground granola

2 T honey

1 T water, juice or low fat milk

Cheese Filling:

2 c Tofu

1 T vanilla

pinch of salt

4 T honey

2 T water

1 t lemon juice

CRUST: Mix together and press into bottom of baking dish.

CHEESE FILLING: Whiz all ingredients in blender until smooth, adding milk to make smooth consistency. Pour over crust and bake at 350* for 20 min. until just lightly browned on top.

When cool, top with favorite thickened fruit topping and chill.
