EFFORTLESS EGG SALAD

1 pound firm tofu, mashed

2 T low or nonfat or tofu mayonnaise

2 medium dill pickles, chopped

1 large celery stalk, chopped

1/8 mild onion, chopped

1 t chicken-style seasoning

1/2 t Spike or other no-salt seasoning

1/2 t dill, optional

Pinch of cayenne pepper

Drain tofu for 15 minutes, or press between paper towels. Mash tofu with fork. Mix all ingredients together. Serve.
