GUACAMOLE DIP

4 T white onion, finely chopped

1 1/2 T cilantro, coarsely chopped

1 or 2 jalapeno peppers, seeded, finely chopped

1/2 t chopped garlic

2 large soft-ripe avocados

1 medium, very ripe tomato

Boiling water

1 to 2 t fresh lime juice

1/2 t salt

Tortilla chips.

Combine onion, cilantro, peppers, garlic and avocados in blender and blend until smooth. Dip tomato into boiling water for about 30 seconds and then take out and remove skin. Then core and remove seeds and chop very fine. Add to the avocado mixture and add lime juice and salt. Serve immediately or chill before serving with tortilla chips.
