HOMEMADE CRACKERS

3 c rolled oats

2 c fine whole wheat flour

1 c wheat germ

1 T brown sugar

1 t salt

1 cup water

2/3 c oil

Combine dry ingredients in large bowl. Measure water and oil in a 2-cup measuring cup. Beat with a fork to emulsify. Pour slowly into dry mixture, stirring with fork to distribute the moisture evenly. Mix well and knead lightly. Divide into 2 equal portions. Place each on a 10x15 well-greased cookie sheet. Flatten with fingers and roll with small rolling pin or glass. Sprinkle lightly with salt, if desired. Cut into whatever shapes you would like. Heat oven to 400*. Place trays in oven and turn heat down to 325* and bake 25 minutes or until lightly browned. (Watch the ones around the edges that they don't brown too fast or become burned!) Remove from oven and let cool on cookie sheet.
