NORTHERN ITALIAN WHITE BEAN SALAD

1 c coarsely chopped, seeded tomato

1/2 c chopped red onion

1/2 c chopped green pepper

1/4 c chopped fresh parsley

1/4 c olive oil

2 t basil

2 T apple cider vinegar

1/2 t salt

2 cans (19 oz each) white kidney beans or other white beans, drained and rinsed

12 leaves of red leaf lettuce

Carefully mix all ingredients in glass or plastic bowl except lettuce. Cover and refrigerate at least 2 hours. Serve bean mixture on lettuce.

Has 11 grams of fiber per serving!!
