POTATO BAC-O-BIT BALLS

1 large raw potato, finely grated

1 green onion, including green tops, sliced

1 T water

1/2 c Bacobits

1 slice bread, crumbled

1/2 t sage

2 T low-fat milk or soy milk

2 egg whites or 1/2 c tofu mashed

Preheat oven to 400*. Mix grated potatoes and chopped onions with water and microwave on high for 5-8 minutes or until potatoes are soft. Add bacobits, bread crumbs, sage, milk and egg or tofu. Mix together thoroughly and refrigerate for 1-2 hours to thicken. Shape into balls. Bake on lightly greased cookie sheet for about 10 minutes or until lightly browned.
